I just LOVE pulsing up all kinds of delicious concoctions with fresh herbs in my food processor. You will seriously want to put this Cilantro Lime Vinaigrette on EVERYTHING. Making your own vinaigrette is so easy and way better than store bought. In fact, once you start, you may never go back to bottled dressings ever again! If your herbs are super fresh, this recipe will store well in a mason jar in the fridge for 4-5 days.
Making your own vinaigrette is a fun, healthy way to incorporate tons of fresh herbs and raw garlic into your diet. It adds so much fresh, tangy flavor to anything you put it on – salads, fish, veggies, meat – ANYTHING. It’s also basically impossible to mess it up because you just taste and adjust the seasonings as you go. This combination of ingredients is seriously delicious.

Cilantro Lime Vinaigrette
Ingredients
- 1 bunch fresh cilantro bottom stems cut off
- 2 limes zest of one and juice of both
- ½ shallot
- 1 tsp honey
- ½ tsp salt
- 1 tbsp apple cider vinegar
- 6 tbsp olive oil
- few dashes of cayenne pepper optional
Instructions
- Add all ingredients to food processor and pulse till desired consistency. Taste and adjust seasonings.

Made this to add to a salad made of black beans, diced red onion, sweet corn, jalepeno, red pepper, and avocado…also used as a quesadilla topper the next day. Phenomenal flavor!
