Crispy Vegetarian Zucchini Fritters
Golden brown and crispy on the outside with a similar texture to hash browns, zucchini fritters are the perfect vegetable side or snack!

Ingredients

cups
grated zucchini
about 3-4 small
¼
cup
flour
½
teaspoon
baking powder
¼
cup
grated parmesan cheese
1
large clove of garlic
minced, or ¼ teaspoon garlic powder
½
teaspoon
onion powder
2
scallions
white and green parts thinly sliced
1
egg
½
teaspoon
salt
fresh cracked pepper to taste
2-3
tbsp
neutral high smoke point oil
avocado, vegetable, canola
Instructions
Sprinkle salt over grated zucchini in a large bowl and let stand for 10 minutes.
Squeeze out as much moisture as possible from zucchini with a clean dish towel.
Return squeezed zucchini to bowl and stir in remaining ingredients except oil
Heat 2-3 tablespoons oil in a heavy bottom skillet or griddle
Carefully spoon ¼ cup size portions of batter onto the hot oil and gently flatten with a spatula.
Fry on each side for 3-4 minutes until golden brown and crispy.
Remove from pan and drain on paper towels. Serve immediately.
Notes
For a fun twist, these fritters can also be made in the waffle iron!
