Banana Bread Baked Oats

Banana bread baked oatmeal tastes just like having a slice of the warm, fresh baked treat. These healthy blended baked oats have a cake-like texture that makes a delicious breakfast, snack or dessert.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 overripe banana
  • 2 eggs
  • ½ cup unsweetened almond milk or milk of your choice
  • 2 tablespoons honey or sweetener of choice
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • teaspoon salt
  • ¼ cup mini chocolate chips

Instructions

  • Preheat oven to 350 degrees
  • Add all ingredients, except for chocolate chips to a high speed blender and blend until smooth.
  • Evenly divide batter and chocolate chips between four ramekins.
  • Bake for 25 minutes until puffed and light golden brown.
  • Let cool for at least five minutes and serve warm or at room temperature.

Notes

These can also be cooked in the air fryer at 300 degrees for 10-12 minutes.
