I love the taste of oatmeal, but one of my biggest complaints is that I don’t really love the gloopy texture. Blending them up into a batter and baking them like a cake – this is something I’m VERY into. You get all of the oatmeal taste with a rich and dense cake-like texture. Ingredients
This banana bread oatmeal is full of healthy ingredients. It’s perfect for breakfast or a healthy snack or dessert!
- Rolled Old-fashioned oats – Only use whole rolled oats. Steel cut oats and quick oats will not work for this recipe. I love these gluten free oats.
- Banana – If you have any sad, overripe bananas on your counter, this is a great recipe to use them up! Brown bananas add a good amount of natural sweetness so you don’t need too much extra sugar.
- Eggs – Eggs help bring the batter together so it bakes up like a cake. For a vegan version, you can definitely substitute a flax egg.
- Milk – My favorite to use in this recipe is unsweetened vanilla almond milk. You don’t have to use non-dairy milk can use whatever kind you have on hand.
- Honey – a bit of honey, pure maple syrup or brown sugar for added sweetness.
- Baking powder – a little leavener helps it bake up just like cake.
- Cinnamon – just a touch for that warm, fresh baked taste.
- Vanilla extract – adds more flavor.
- Salt – for balance
- Chocolate chips – not required but strongly suggested. Feel free to experiment with other mix-ins like walnuts or chia seeds.
Method
Blended baked oats could not be easier to make. No need to separate dry ingredients and wet ingredients into different bowls. Just add everything, except the chocolate chips or other mix-ins, to a blender and blend until the oats are pulverized into a smooth batter.
Evenly divide the batter and chocolate chips between four greased ramekins, bake until puffed and light golden brown and that’s it! Let baked oats cool for at least 5 minutes before digging in. Serve warm or at room temperature. I love making these in individual portions for healthy a meal prep breakfast or snack for the week.
Recipe Tips
- If you don’t have ramekins, you can certainly make this in a small baking dish and cut into individual servings. Ramekins are great for making individual servings of all kinds of things. Worth it to get some!
- Use a high speed blender and thoroughly blend the mixture and let the batter stand for a few minutes to fully hydrate the oats for best texture. If you don’t have a blender, you can use oat flour as a substitute!
- Leftovers should be tightly wrapped or stored in an airtight container in the refrigerator. To enjoy, warm in the microwave.
- Serve baked oats on their own or try it topped with more sliced bananas, berries, chopped nuts, a dollop of greek yogurt or drizzle a little maple syrup on top.

Banana Bread Baked Oats
Ingredients
- 1 cup old-fashioned rolled oats
- 1 overripe banana
- 2 eggs
- ½ cup unsweetened almond milk or milk of your choice
- 2 tablespoons honey or sweetener of choice
- 1 teaspoon baking powder
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ⅛ teaspoon salt
- ¼ cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees
- Add all ingredients, except for chocolate chips to a high speed blender and blend until smooth.
- Evenly divide batter and chocolate chips between four ramekins.
- Bake for 25 minutes until puffed and light golden brown.
- Let cool for at least five minutes and serve warm or at room temperature.
