Brown Butter Toffee Oatmeal Cookies

An upgraded oatmeal cookie with brown butter and rich toffee bits.

Ingredients

  • 2 sticks butter browned and cooled
  • ¾ cup dark brown sugar
  • ¼ cup white sugar
  • 2 eggs
  • tsp vanilla extract
  • 2 cups oats
  • cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup toffee bits

Instructions

  • Brown two sticks butter and let cool completely
  • Cream together butter and sugar until light and fluffy. Add eggs one at a time.
  • Add in vanilla
  • Stir together oat, flour, salt, baking soda and cinnamon in a separate bowl.
  • Add dry ingredients to wet ingredients and stir until just combined. Do not over mix.
  • Stir in toffee bits.
  • Chill the dough in the fridge for at least an hour, 2-3 if you can
  • Bake at 375° for 9-11 minutes or until slightly browned around the edges.
