Brown Butter Toffee Oatmeal Cookies
An upgraded oatmeal cookie with brown butter and rich toffee bits.

- 2 sticks butter browned and cooled
- ¾ cup dark brown sugar
- ¼ cup white sugar
- 2 eggs
- 1½ tsp vanilla extract
- 2 cups oats
- 1½ cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- ¾ cup toffee bits
Brown two sticks butter and let cool completely
Cream together butter and sugar until light and fluffy. Add eggs one at a time.
Add in vanilla
Stir together oat, flour, salt, baking soda and cinnamon in a separate bowl.
Add dry ingredients to wet ingredients and stir until just combined. Do not over mix.
Stir in toffee bits.
Chill the dough in the fridge for at least an hour, 2-3 if you can
Bake at 375° for 9-11 minutes or until slightly browned around the edges.
