Herbed Goat Cheese and Smoked Almond Stuffed Prunes

Ingredients

  • 24 California prunes dried and pitted
  • 4 ounces goat cheese
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped chives
  • ¼ cup chopped smoked almonds
  • 1 tablespoon hot honey

Instructions

  • Finely mince herbs and combine with goat cheese in a medium bowl.
  • Use your thumbs or the round end of a wooden spoon to make an indentation in each dried prune, forming it into a cup-like shape.
  • Spoon a rounded half teaspoon of the goat cheese mixture into each prune, forming a dome shape on top.
  • Roll the goat cheese dome of the stuffed prune in chopped, smoked almonds.
  • Arrange stuffed prunes on a serving platter and drizzle with hot honey and garnish with more fresh herbs. Serve immediately.

Notes

These party bites are best served fresh.
Leftovers will keep in an airtight container in the refrigerator for 1-2 days.
