- 24 California prunes dried and pitted
- 4 ounces goat cheese
- 1 tablespoon chopped parsley
- 1 tablespoon chopped chives
- ¼ cup chopped smoked almonds
- 1 tablespoon hot honey
Finely mince herbs and combine with goat cheese in a medium bowl.
Use your thumbs or the round end of a wooden spoon to make an indentation in each dried prune, forming it into a cup-like shape.
Spoon a rounded half teaspoon of the goat cheese mixture into each prune, forming a dome shape on top.
Roll the goat cheese dome of the stuffed prune in chopped, smoked almonds.
Arrange stuffed prunes on a serving platter and drizzle with hot honey and garnish with more fresh herbs. Serve immediately.
These party bites are best served fresh.
