Sheet Pan Sausage, Potatoes and Green Beans

What if I told you that you could have dinner on the table in about 30 minutes with minimal prep and one pan? I know, it sounds almost too good to be true! This one pan meal is so easy to throw together and it’s pretty much guaranteed that everyone in the family will love it. This is the perfect “I don’t feel like cooking” recipe.

Ingredients and substitutions

This dish comes together easily with just a few simple ingredients. I usually always have some kind of sausage in the fridge or freezer and potatoes in the pantry.

  • Sausage – my favorite is to use smoked sausage or kielbasa in this recipe. Any fully cooked sausage will work. This is the exact sausage I used when developing this recipe.
  • Potatoes – You can use yellow, gold, red or creamer potatoes. The most important thing is that they are cut in small, uniform pieces for even cooking.
  • Fresh green beans – I have only tested this recipe with fresh green beans. I prefer my green beans tender crisp with some bite to them so I find that fresh is the only way to go here.
  • Garlic – fresh is best but you can definitely sub in ½ teaspoon of garlic powder if you don’t feel like mincing.
  • Dried herbs – I use oregano and parsley. If you have Italian seasoning on hand, use it!
  • Olive oil – good olive oil always makes a difference in simple dishes. The Furies is my go-to and definitely worth it.
  • Salt, pepper, red pepper flakes – to taste.

Just a few simple ingredients and a sheet pan is all you need.

How to make sheet pan sausage, potatoes and green beans.

You don’t need anything special just an oven and a sheet pan. This recipe couldn’t be any easier!

Start by cutting up the potatoes into one inch chunks. Drizzle cut potatoes with olive oil right on the sheet pan and toss. Spread the potatoes out and pop them in a preheated oven for 15 minutes by themselves. Starting the potatoes first ensures that they have plenty of time to cook through and get crispy by the end of the process. While the potatoes are in the oven you can quickly prep the rest of the ingredients.

Start roasting potatoes first.
Slice sausage into ¼ inch pieces.

Trim the green beans, mince fresh garlic if using and slice sausage into ¼ inch thick slices. I like to slice the sausage on a bias, so that there is maximum surface area to make contact with the pan. This helps brown the sausage a bit and make the edges crispy and caramelized.

After 15 minutes, remove the potatoes from the oven and slide them over to ⅓ of the sheet pan. Add the green beans to the middle third and the sausage in a single layer on the remaining ⅓ of the pan. It’s ok if the green beans are not completely in a single layer.

Let the potatoes roast for 15 minutes, then add the rest of the ingredients to the pan to finish.

Drizzle remaining oil over green beans. Sprinkle garlic and dried herbs all over. Add salt to potatoes and green beans only as the sausage is already pretty salty. Use tongs to gently toss, making sure potatoes and green beans are coated in oil, garlic and seasonings. Run the sheet pan back in the oven for another 15-20 minutes, tossing each ingredient halfway through. The potatoes will be crispy, the green beans will tender with some bite and sausage just slightly caramelized and browned.

You can mix it all together or serve everything separately right off the pan.

What size sheet pan should I use?

For this recipe I use a 12 x 17 half sheet pan. I find this to be the perfect size for this amount. If you want to make more to feed a larger family, I recommend using two sheet pans instead of overcrowding one.

Can I substitute a different vegetable?

I have not tried tis recipe with different veggies, but I imagine this would work well with any veggie that has a similar cook time. Broccoli cut into small florets, cut Brussels sprouts or ¼ inch carrot sticks would likely work well too.

What to serve with sausage, potatoes and green beans?

This dish is perfect as a standalone meal. If you want to add to it, I recommend going with a simple, fresh salad or I also love it with a big hunk of cornbread on the side.

Ingredients
  

  • 12 oz fully cooked sausage sliced into ¼ inch thick pieces
  • 12 oz fresh green beans trimmed
  • 1 pound potatoes yellow or gold preferred, cut into 1 inch chunks
  • 3 tablespoons olive oil
  • 3-4 cloves fresh minced garlic or substitute ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Salt pepper and red pepper flakes to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Cut potatoes into 1 inch chunks and spread out on sheet pan. Toss with half of the olive oil and put in the oven to roast for 15 minutes while you prepare the rest of the ingredients.
  • While the potatoes are roasting, trim green beans, mince garlic and slice sausage into ¼ inch thick pieces.
  • Remove potatoes from the oven after 15 minutes and use a spatula or wooden spoon to slide them over to ⅓ of the sheet pan. Add green beans to the middle ⅓ of the pan and sliced sausage to the remaining ⅓ of the pan.
  • Drizzle green beans with remaining olive oil. Sprinkle garlic and dried herbs over green beans and potatoes and gently toss each ingredient separately with tongs to coat.
  • Place sheet pan back into the oven and roast for an additional 15-20 minutes until the potatoes are crisp, green beans are tender and sausage is a little brown and crispy around the edges. The edges of the sausage slices may begin to curl up a bit.
  • When it comes out of the oven, season potatoes and green beans only to taste with salt, pepper and red pepper flakes. Serve immediately.

Notes

Keeping the ingredients separate on the pan ensures that minimal moisture gets to the potatoes. That keeps them crispier throughout the process.
Only season the green beans and potatoes to taste. The sausage is likely already pretty salty so use salt sparingly.

    Sorry… maybe it was user error, but it was just okay. I’m a pretty good cook, and the seasonings were great but the beans came out tough and the sausage kinda dry. I’d expected the beans to be like what I get when I saut or stir-fry them. The potatoes were excellent though. I’ll try this again, but probably not with fresh green beans.

    can i use canned green beans ? do I add them towards the end of the bake so they wont get too mushy?

    I needed a simple week-night dinner idea and tried this last week with Kielbasa. SO SIMPLE AND DELICIOUS! Perfect amount of flavor and ingredient ratio to get those yummy crispy bits. I actually made this two nights in a row, the next night with smoked turkey sausage, because how often do you find a 30 min healthy recipe with minimal prep/clean up?!? Pro-tip : use jarred minced garlic if you’re super busy or tired 😉
