If you’re a beet lover like me, this Cherry Berry Beet Smoothie recipe is for you. If you think you don’t like beets, I’m here to change your mind. Raw, roasted, spiralized, juiced, smoothied, there are hundreds of different ways to enjoy beets. This is hands down one of my favorites.
Beets have an earthy flavor that can be overpowering. This vibrant, hot pink smoothie is creamy and sweet from the berries and cherries and a bit of avocado. The key is getting the ratio just right. Make sure that you use a small beet. Too much beet can overpower the natural sweetness of the fruit and make you a non believer. I typically do not add sweeteners to my smoothies but this one is perfect with a little bit of orange juice and just a touch of honey or maple syrup.
My smoothie recipes are generally approximations as everyone has different preferences for consistency and sweetness. I recommend starting out with less liquid and sweetener and then adding more if you need to loosen or sweeten it up as you go along. You can also add any protein, superfood or supplement powders as you wish!
This video is a recipe demo of me making it with fresh organic strawberries and beets picked that very morning with my friends at Middlebury Organic Farms. It doesn’t get any better than that!
