This Heirloom Tomato Tart is simple, elegant and incredibly easy to put together. It’s perfect for brunch, as an appetizer. Or pair it with a simple green salad for a complete meal at any time of day. The flaky crust in this recipe is just a sheet of store bought puff pastry dough. You can get artsy with it an arrange your tomatoes in all kinds of fun patterns. You can also use any kind of tomato you like, I just love the color and variety in shapes and sizes of gorgeous heirloom tomatoes.
There are a few tips you want to follow for making sure that your tart stays light and crisp and doesn’t get soggy from the ripe tomato juice!
Make sure to drain your tomatoes well on paper towels to pull out the excess moisture. This sounds counterintuitive but trust me, when the ‘maters cook up they’ll have a perfectly jammy texture and concentrated flavor that is just right.
Bake your puff pastry till almost done and then take it out, top it and run it back in to finish. This also helps keep the crust nice and crispy by creating a bit of a moisture barrier.
This recipe calls for fontina cheese but you can really mix it up with whatever you like here – feta, goat cheese, mozzarella, you could even do cheddar! Go for it.
